Fall is here and pumpkin is everywhere! Pumpkin muffins, pumpkin pie, the infamous pumpkin spice lattes....
One of my favorite healthy pumpkin items are pepitas, or pumpkin seeds! (but isn't pepitas so much more fun to say?!) We've all heard of them -- you may have even scooped and roasted your own after carving a Halloween pumpkin. Perfect to add to salads, top a bread with, sprinkle into oatmeal-- so many options.
What makes this little seed so special? It's actually a superfood-- better know as a nutrient dense, healthy, beneficial food. Pumpkin seeds have a few factors that add up to make them a superfood.
Lots of micro and macro nutrients!
- Fat & protein
- Vitamins K and B2
- Phosphorous, magnesium, zinc, manganese, iron and copper
So.... what will all these nutrients do for you?
The macro & micro nutrients in pumpkin seeds will
- reduce inflamation
- support your immune system (SO important as we head into cold & flu season)
- control blood pressure and increase good cholesterol
- regulating blood sugar levels (helpful to regulate mood and energy swings)
- promote digestive health
Best of all, pumpkin seeds are so simple and so delicious to add to your diet! A sprinkle on some oatmeal, a salad, or a handful as a snack! You can even get them with some other superfoods in these Vitalitee Overnight Oats!
Thanks for stopping by to learn about this fall superfood-- leave a comment with any questions!
